I have a serious matter to discuss with you today. I’m pretty sure you’ll be able to relate. What would you do if you had one of those emergencies…the kind of results in a total out of body experience if you don’t consume a disgusting amount of chocolate and peanut butter as fast as possible? You don’t know? It’s okay, I’m going to tell you.
While I was looking for something Pinteresting a few weeks ago (aka, zoning out on Pinterest at the end of the day because that’s all my mental capacity can afford) I saw a picture of peanut butter and melted chocolate, on a spoon. These were my exact thoughts (hold your horses, this is deep stuff), “well. duh.” Why didn’t I think of that? Do you know how many times this mama has wanted a peanut butter cup or buckeye only to find stale cookies, half a graham cracker, broken candy canes, and that weird hard candy that no one eats left in our snack boxes? I’ll take peanut butter cups in any form or fashion – big cup, regular size, snack size, or the minis (ok…a bag of the minis). This quick-fix (which could be totally healthy if you make it some other way than I did) is an awesome emergency substitute for a peanut butter cup or buckeye. It’s basically fool-proof and super delicious.
Are you ready for the instructions? I thought so. Get your favorite dark chocolate (chips, candy bar, bark, etc.) and put it in a microwave safe bowl; melt it slowly (about 10-15 seconds at a time) in your microwave (remove and stir every 10 to 15 seconds to make sure it doesn’t stick/burn). Once you have that chocolatey goodness nice and melted, find your favorite spoon. Scoop out some peanut butter, dip peanut butter/spoon into the dark chocolate, scarf down, and repeat as many times as necessary. If you’re opposed to double-dipping in your own peanut butter jar, put it in a separate bowl as well. Don’t double-dip at someone else’s house; that’s not nice. I used full-strength peanut butter because that’s what I found in the pantry first as well as a candy bar that had been in our freezer for two years or so. Don’t judge. You could make this a little more health conscious/better for you by using some fresh chocolate and natural peanut butter. I’m sure it would be just as delicious.
