Cottage cheese clean eating pancakes
Ok, real talk. I’m obsessed with breakfast foods. Basically, if I could go to a breakfast buffet every single day without it being detrimental to my health…I would totes go.
Because clean eating doesn’t jive well with coffee cakes; cinnamon rolls; donuts; pastries; or sausage gravy and biscuits, I’ve had to get creative over the last few years. I want to tell you about my most recent discovery…

I know what you’re thinking. Cottage cheese pancakes sound like something that would be thin, sour, falling apart, hard to cook, and tasteless. I thought that, too, when my sister told me she had been eating cottage cheese pancakes. I was like – um, thanks but no thanks. On the contrary, my dear clean eating friends…. Cottage cheese pancakes are nothing short of amazeballs. I adapted a recipe from food.com and it’s SUPER EASY. Are you ready?
Check it out:
- 1 whole egg; 2 egg whites
- 1/2 c. rolled oats
- 1/2 c. cottage cheese (I use 2%)
- 1/2 tsp. vanilla
- 1/2 packet of pure stevia
- 1/2-3/4 tsp. cinnamon (I use Saigon)
Add all ingredients to your blender cup and blend on med-high until well combined. BE SURE to check the consistency of the batter. If it seems too thin for pancake batter, just add a few more oats. No big deal!
Transfer approx 1/4 c of batter per cottage cheese pancake to a pre-heated skilled and cook till golden. I’ve had these pancakes THREE days in a row and the scale is going down. So, they should not inhibit your weight-loss if you are doing the rest of your day right. 🙂
